NOODLES WITH SPICY NUT SAUCE

This recipe has many substitutions to accommodate all of your family’s tastes. 

Go from mild to nuclear on the heat. Substitute nut butters if you dislike them or have allergies to them. Use sweeteners and pastas that are good for a diabetic diet. 

Use the veggies you like and add any type of fruit to give it a fruity twist.

Once you get it tasting the way you and your family like, I am sure it will become a staple dish on your table.

Ingredients
  

  • 3 tbsp. Peanut Butter — Peanut Butter – You can use chunky or smooth or even substitute with any other nut spread of choice
  • 1/4 cup Soy Sauce — You can substitute with reduced-sodium Soy Sauce.
  • 1 1/2 tbsp. Chinese Chili Oil Any oil will work, add spicy sauce or chili pepper flakes to taste.
  • 1/4 cup Rice Vinegar Try different vinegar types for a variety on this dish.
  • 2 tbsp. Brown Sugar Dark preferred, or any sweetener of choice.
  • 285 Grams/10-ounces Wheat noodles Cooked according to package directions. Chinese/Asian preferred.
  • 3 Large Green Onions Sliced into thin slices.
  • 1/2 cup Red Bell Pepper Finely chopped. Yellow or green peppers are also good.
  • 1/4 cup Celery Finely chopped.

Instructions
 

  • Combine the nut-butter, soy sauce, chili oil, vinegar and sugar in a large bowl. Stir till blended well.
  • Toss the drained noodles with chili-nut sauce, onions, peppers, celery and any other ingredients.
  • Let sit till it reaches room temperature. Then garnish with sesame seed and been sprout and serve.

Notes

For variations, add chopped fruits or even a fried egg on top.
